Pancakes with jam
Just a little different.
Prepare the pancakes and stack them on a plate. Put the apricot jam, orange zest, sugar and a dash of water in a pan and carefully bring everything to the boil. Keep stirring! Briefly allow to simmer and remove from the stove. Stir in the cognac if desired. Use it to coat the pancakes and fold them into quarters. Sprinkle with icing sugar to taste and serve.
